After 8

Like most city -dwellers,after 8pm seem to be a time to either indulge in a good meal,or slouch on the sofa watching tv programmes or simply eating in front of the tv....haha....Now that clover is joining us at the dinner table, she seem to enjoy her food even more, having a nibble here and there at our food...as she can be picky about her food...haha....Read that by letting clover eating together with us will reduce some stress of her having to endure all the stares at her finishing her meal...haha...Furthermore,when she see us tucking in,she will be more willing to try the food without much coaxing...hehe...Hence,my cooking is always lightly seasoned or none at all for her sake and our health...But I always draw the line at her trying my desserts,no hurry for that anyway...This is meant for sharing between adults, too bad for you ,clover...haha...Next time ,I will definitely bake more of this,hehe...try it and judge if it is worth it...hope you like my another experiment of mine...hehe..

After 8 brownies
120g dark broken chocolate
3/4 cup butter
approx 2 cups sugar(I cut off around 3 tbsp of sugar as after 8 is sweet too)
11/2 cup flour
3 eggs
1/2 cup yoghurt
12 pieces of after-8 chocolate mints
Methods:
1.Melt chocolate and butter using either the microwave or double-boil.Add sugar to stir.Add eggs and stir.Add in sieved flour.
2.If mixture is lumpy, pour into a sieve and drain it.Pour out one layer, covering the base, add the after 8 chocolate mints, leaving around 3cm space apart.Cover the chocolate mints with the rest of brownie batter.Bake in preheated oven at 180 degree celcius for about 35 minutes, cool in pan and cut.

My outdoor clover

Sitting in the shopping trolley, great view and no pram to get in the way...hehe..

All dressed up and ready

Recently, little clover went on a five days trip to Thailand, despite me having some misgivings about the trip, worrying if she will cry on the flight due to air pressure in the ear,hot weather etc...None of this happened at all, instead she was happily making new friends on the flight, playing peek-a -boo on the plane with the passengers sitting behind...She was like an energizer little bunny, happily soaking in all the sights ,sounds, clapping to the music played in the background of a busy market alley, smiling, teasing whoever glanced in her direction...Even when the village eatery had a blackout, that did not faze nor interest her as much as the lizards crawling on the floor..haha..She is a very sociable baby who enjoys being the centre of attention,in fact she will whine if nobody pays any attention to her...haha..which is a good thing as my mum often says,I too am not really a homebody...haha...

Lime Chicken in coke

I was told by my lao gong that this is a popular dish in China and Taiwan, the reviews I seen on a food forum make me curious to attempt it for myself.I modify some of the ingredients, but the amount of coke used remains the same.Oddly enough, though the chicken was basically cooked in cola-cola,we cannot detect the slightest hint of the coke at all.Instead,it mellow into a sweet, thick gravy that tasted like braised moist, succelent chicken that goes well with rice/noodles.Can try it if you, too, are curious...hehe...

Lime Chicken in coke
5 pieces of chicken thighs
2 limes(I used calamari limes)
1 tbsp light soya sauce
1/2 tbsp dark soya sauce
1 can of normal coke(can change to coke with lemon and omit the fresh limes)
1/2 large onion
3 cloves garlic
1 tbsp oil
1. Marinate the chicken thighs with half can of coke, juice of 1 lime for about 1 hour.
2.Heat oil,fry onion and garlic till fragrant.add in chicken thighs, fry till slightly brown.Add in the sauce and remaining coke, simmer for about 45 minutes till chicken is cooked.Squueze out juice of the other lime, mixed and serve.

Sluggish system-hope this helps

After watching the documentary last tue evening on YOU ARE WHAT YOU EAT,whereby the experiment involve 7 volunteers, each with high cholesterol or overweight to undergo a drastic transformation on their diet, having to consume only raw fruits and vegetables for a week,3 meals a day(with close monitoring from a group of doctor and dietician) ...hmm...That seem rather extreme to me,still the health benefits of a high water content fruits and vegetables is not to be underestimated...All of them reported having more energy, lower cholesterol ,that is an encouragement for me..hehe.Now with a busy work schedule,I hardly have time to prepare meals, the home is pretty much like a hotel now,I just feel like collapsing onto the bed,hmm...hope a diet of high water content fruits and vegetables help me....Luckily,nutritious foods need not be costly and the best way to reap the maximum amount of nutrients, eat it raw or blanced slightly, this is nature best medicine to lower risk of chronic diseases...haha...

Here is some information I found on the health benefits of the fruits and vegeatbles, for I love food combination of vibrant mixed fruits and vegetables together:
(Information adapted from health and nutrition website)
Lycopene
Found in Tomatoes, persimmon, watermelon and pink grapefruit.

This carotenoid is a fierce cancer fighter and help prevent heart disease by inhibiting the formation of harmful LDL cholesterol. The deeper the red or pink colour, the higher the lycopene content. Studies have shown that a high intake of tomatoes, which are rich in lycopene, can significantly reduce the risk of prostate cancer.

GREEN INDICATES Isothiocyanates, folic acid
Found in Cruciferous vegetables (the cabbage family), spinach, bok choy, kale, peas, artichokes, and asparagus.Folic acid is required for the formation of healthy red blood cells.

YELLOW INDICATES Lutein, zeaxanthin
Found in Yellow corn, bananas, yellow capsicum and honeydew melon.

These two carotenoids work together to help maintain sharp, healthy eyesight, They are used in the area of the retina called the macula, which is the centre for sharp, focused vision. They protect the eyes from long-term light damage. We need to eat about 5mg of lutein and 1mg of zeaxanthin every day for adequate eyesight protection, so it's good to include a large splash of yellow.

Bananas are worth a special mention for their high potassium content. They can help decrease the risk of stroke, lower blood pressure, relieve heartburn, prevent stomach ulcers and (particularly eaten green) aid in abating diarrhoea.

Purple foods should generally be eaten with the skin as this is usually most strongly colored
PURPLE/BLUE INDICATES Anthocyanins
Found in Blueberries, dark cherries, prunes, blackcurrants, cranberries, red wine, red apples, black grape juice, blackberries, strawberries, beetroot and figs.

The blueberry contains more antioxidants than any other fruit or vegetable. Anthocyanins have remarkable antioxidant properties. Purple or blue fruits help prevent nerve cells in the brain from deteriorating, and possibly help guard against the effects of ageing in general. Anthocyanins may also have a beneficial effect on heart disease by inhibiting blood clots.

Anthocyanins have anti bacterial properties, are useful for tackling urinary tract infections and gastrointestinal upsets. They're also anti-inflammatory, which is why blackcurrant syrups are used in cold and throat medicine.
