Crispy Moments

Yipee,my maternity leave is finally here, time to rest and get ready for chubby Clover's arrival. Now that am 8 and a half months pregnant, backache and frequent urination has become my nightly complaint, the pain can sometimes get so intense that it jolted me awake, and making me a zombie by day.Not to mention the fact that I have insomnia every nite from 3am-5plus,after laying down to rest at 5 plus, within an hour time, its time to head for work. So,one could tell that I really look forward to this much needed rest before the real nitemare begins..haha..
Now that Im leaving,I was thinking of what to give to my collegues and boss, thus what better gifts than food? Its a gift with a personal touch and give me an opportunity to show off my baking skills..hehe...All in all,I baked 40 cupcakes for colleagues,it was well-received by them,in fact, one colleague even wolfed down 4 cherry cupcakes at one go.Wah,was he really hungry or are they irresistible?Hopefully, its the latter..hehe..The crispy moments were in fact Nestum cookies tinged with orange scent and was not too sweet.Hope my boss like it.Bye,my dear colleagues, thanks so much for the constant support and encouragement, will visit you with chubby Clover..hehe..

Pizza-licious

Went for my fortnightly visit to the gynae, gosh,Clover is overweight by 600gms!!She weighs 3.1kg now, a hefty weight for bb ger, even gynae was a bit surprised and after double checking her weight, well,my chubby bb still weighs the same.Even though am just overweight by 2 kg,it has a drastic effect on the bb's weight and I have to monitor my weight closely, else if Clover tip the scales at 4kg,I will have to go for C-section.Scary..Anyway,I thought, well, that does not mean I cannot eat,cos am still hungry every two hours.I just opt for healthier choice foods and no takeaways, due to high sodium and possibly fat content.Tonight,I baked a wholemeal pizza with tomato, capsicum, tuna, mushrooms, chillies and topped with lotsa low-fat morzaella cheese.Yum yum.surprisingly,I felt full after consuming half a pizza and the other half was devoured by my lao gong.Hmm,definitely a healthier choice compared to conventional pizza though I do miss the garlic bread and grilled chicken wings..Guess its gonna be a long while before I can eat them..sigh.

Choco Ondeh Ondeh?

Hmmm.......What's this?New version of ondeh ondeh? That was the typical comment I got when I passed this around in the office.Hehe...This is actually my own version of chocolate lamingtons.I baked a sponge cake, taking note to reduce the sugar content, after the cake had cooled, cut into cubes, well,at least I tried to cut into cubes, though some may looked out of shape..haha...Dipped the cubes in melted chocolate mixed with cream and icing sugar, rolled it in dessicated coconut and bingo, chocolate lamingtons.Oh,I also added in a tbsp of orange juice in the chocolate, giving it a tinge of orange fragrance. This cake is best served chilled due to the cream used and its so rich,I could chomped down a couple at one go.Instant way to perk up my moods.Too bad I had to watch my weight,if not I could have this for tea and after meal dessert.Sigh..

Lemon Buttery Cookie

Wow,butter again, another sinful indulgence again.Hehe..Stumbled upon this recipe in an Australian magazine.Instead of using orange and hazelnut as the original recipe suggest,I subsituted it with lemon and almond meal.To add extra zing to the cookies,I squeezed one tbsp more lemon juice than the recommended amount. To add an extra touch,I dusted the surface with icing sugar, the end result, well, let my testers comment on it.Read about it in the comments column.

Pregnancy Cravings - Gingko the wonder food

Pregnancy is strange,it makes me craves for food I hardly touched in the past. This dessert of gingko nuts, barley and beancurd sheets has been a staple favourite of mine ever since I got pregnant,so much so that I must have it every week.I liked my dessert not too sweet and I only use fresh gingko nuts as canned or preserved ones normally comes with an unpleasant taste.Needless to say,my lao gong had to do the pounding for me while I peeled off the skin.Hehe..

The best part, this dessert does contain some health benefits, for instance,
Barley-the type illustrated here is the china barley, which is bigger and not too cooling compared to Holland barley.Barley is a good source of fibre, lower cholesterol and B-vitamins.
Gingko nuts-According to TCM,this helps to improve memory, however, long term consumption is recommended.Me?,I only like the taste.hehe...
Beancurd Sticks-Comes available in two types, this is the one meant for dessert, simply soaked in water for awhile and simmer in pot.Rich in calcium and protein.
Conclusion-No harm consuming this dessert, especially in hot weather.Mmm...

Super Duper Spicy Spaghetti

Help,my tongue is on fire, this plate of black pepper spaghetti appeared innocent, but it certainly was not.Had this for dinner last night, and when I served it to my lao gong, who loves chilli,he found it too spicy as well.Oops ,too generous with the black pepper,I guess.Haha...Overall,it was an easy dish to prepare, perfect for busy city dwellers.Basically, one can prepare it using ingredients from the fridge and armed with black pepper, viola, dinner served within 15 minutes.Cooking cum washing was a breeze too. Will definitely try it again.

Chocolate and cheeze-best combination

Gosh, how I loved cheesecakes! Whenever I go out for a gathering,I always leave room for a drink and cheesecake. The cake counter is always the first thing I zoomed after upon finding a cosy seat. These sinful indulgences are so tempting, and if I could not make up my mind,I will order two and tuck into them straight away.Cheesecakes, being so rich and so satisfying, never fails to lift up my moods.Hehe...Hence,when I laid my hands on this recipe,I knew I had to try it.Never mind that it took 2 hrs to bake, the end results was worth it.As I had to watch my weight,it took me some days to finish it,well,it was good while it lasted.Mmm...Anyone keen on going for Cafe Latte and cheesecake?

butter cake VS chiffon cake

Hmmm...How to differentiate a butter cake from a sponge cake?Basically,as butter cake contains high ratio of fat to flour, the end result should be a cake with fine, even texture. The cake should be well-risen with good volume and level top.Furthermore, the fat will contribute to the tenderness, moisture to the cake and there should not be large air-holes and should be crumbly.
As for sponge cake, due to low or even absence of fat, it should be fine grain, light spongy texture and high volume.Unfortunately, such cakes will go stale very soon.

How to store cakes?Apparently,it seems that by keeping half an apple in cake box helps to retard staleness, frosting the cake helps too as it prevents moisture loss.By substituting sugar with honey also improve the shelf life of cakes. When storing cake,it helps a great deal by freezing cakes, as frozen cakes keep well to three months if frosted.

Hope that this info helps to clear up the air about the types of cake as well as storage of cakes. Not all cakes are alike, and being a food science graduate,I do love to break my cake apart before I eat it.The texture is important, and no wonder my lao gong always say I'm fussy about my food.Haha....

Orangey cake with raisins

Gosh, how soon time flies! Before I knew it,the holidays are over and it is time to get back to work.Sigh,so before I confine myself to the harsh reality of working life,I baked an orange butter cake,to perk up my spirits to prepare for the final countdown.Hehe...The cake smelt divine, due to the high amount of butter mixed with orange rind.Mmm...I simply loved to sit myself in front of the oven and get myself intoxicated.Instant pick-me-up,I say..Better than caeffine which can leech calcium loss from bones, and is a natural diuretic. However, having said that, cakes can be high in fats and sugar, hence I shared it with my friends who dropped by for lunch, and my neighbours. After all, calories cling, doesnt it?Haha...And of course,I reserved the heart-shaped cake specially for my lao gong, and served it with a big scoop of chocolate ice cream. The verdict: YUmmy as claimed by him...More cakes ,sweetie?
